After training at a long-established Kyoto restaurant, he mastered the techniques of Chinese cuisine. He pursues a fusion of the delicate sensibilities of Japanese cuisine and the boldness of Chinese cuisine, establishing his own unique style that uses the Hokkaido's ingredients.
